Spuma di mortadella is a light and delicate mousse and a traditional appetizer of Emilia-Romagna. The recipe is so important to the region that it was registered with the Chamber of Commerce of Bologna in 2004. Flavorful, smooth and creamy, spuma di mortadella can be enjoyed spread on thin slices of crusty bread or crackers, or used as a dip for crudité.
