Biscotti di meliga are the quintessential homemade cookies of Italy’s northern region of Piedmont. Their name comes from the word in Piedmontese dialect for cornmeal, meliga. The Piemontesi make these cookies in all sorts of shapes and sizes, either using a cookie press or just forming them by hand.

Cornmeal gives biscotti di meliga their rustic chewiness, while the lemon adds a sophisticated, bright and refreshing tang.
